论
工业的飞速发展,人们对食品的色、香、味、品种、新鲜度等方面提出了更高的要求,必须开发更多更好的新产品来满足人们的需求,食品添加剂在这方面发挥重要作用。因此从某种意义上讲,食品添加剂在食品工业的发展中起了决定性作用,没有食品添加剂,就没有现代食品工业。食品添加剂对于改善食品的色、香、味、形,调整食品营养结构,提高食品质量和档次,改善食品加工条件,延长食品保存期,发挥着极其重要的作用。
然而我国近年来的“食品事件”层出不穷,使得我们对食品添加剂有了或多或少的认识:三鹿奶粉中的三聚氰胺、面粉中的增白剂、大米里中掺的石蜡……这些食品安全隐患使得我们现在想到“剂”就不寒而栗,其实“剂”本身没有那么可怕,可能消费者在认识中存在误区。到底何为食品添加剂,它与我们的生活有多密切。
